Below is a fun, simple recipe to get your started. (And don’t tell anyone, but you can easily substitute strawberries, cherries, or even chocolate chips for blueberries in this recipe).
Ingredients:

1 1/2 cups graham cracker crumbs

1 1/4 cup sugar (divided into 1 cup and 1/4 cup)

6 tablespoons melted butter

40 ounces cream cheese, (softened at room temperature)

3 tablespoons flour

1 tablespoon vanilla

1 cup sour cream

4 eggs

2 cups blueberries (rinsed and dried – fresh blueberries are best)

Directions:

1. Preheat oven to 325 degrees. Lightly grease or butter a 9×13 inch pan.

2. Combine graham crackers, 1/4 cup sugar and melted butter. Press crust mixture into pan. Bake for 12-15 minutes.

3. While baking, beat cream cheese and 1 cup sugar. Add flour and vanilla and mix well. Mix in sour cream and add eggs one at a time. Mix until just combined, but be careful not to overbeat.

4. Pour batter over crust. In a food processor or blender crush up 1 cup blueberries. Hand stir-in last cup blueberries. Spoon berries over cheesecake batter.

5. Bake for 50 minutes or until done. Completely cool on wire rack. Refrigerate 4 hours or overnight.
